PRIMARY OBJECTIVE
The CL is expected to perform duties in a courteous, safe, and efficient manner, in accordance with the hotel’s policies and procedures.
Hygiene CL supports the implementation of food safety and hygiene practices within culinary operations to ensure a safe environment for associates and guests. The role assists in monitoring food handling practices, maintaining cleanliness, and ensuring compliance with HACCP guidelines and hotel standards.
DUTIES AND RESPONSIBILITIES
GENERAL DUTIES:
Support the Culinary team in maintaining Food Safety and Hygiene systems (HACCP) to ensure safe and efficient kitchen operations and contribute to guest satisfaction.
SPECIFIC DUTIES:
Follow hotel policies related to hygiene, health, and safety at all times.
Maintain HACCP documentation such as temperature logs, cleaning schedules, and checklists.
Support communication with purchasing and receiving teams regarding food hygiene.
Support vendor hygiene checks and documentation when required.
Assist with hygiene- related training activities when required.
Check food expiration dates, labeling, and storage practices to ensure compliance with standards.
Assist in coordinating staff medical checks and hygiene documentation when needed.
Collect and store daily food samples according to hygiene standards when required.
Help ensure compliance with local hygiene and food safety regulations.
Assist in basic hazard identification related to food safety.
Support the maintenance of hygiene records and documentation.
Observe hygiene practices of kitchen associates and report any concerns.
Support hygiene inspections and preparation for audits.
Ensure proper cleanliness and sanitation of kitchen equipment and work areas.
Assist in reporting any issues related to food safety, sanitation, and cleanliness in kitchen and F&B areas.
Assist in monitoring food receiving, storage, and handling processes.
Assist in internal hygiene inspections and audits.
Support HACCP implementation through daily monitoring and record- keeping.
TRAINING AND ASSOCIATE RELATIONS
Participate in departmental meetings and briefings.
Maintain professional appearance according to hotel standards.
Communicate effectively with team members regarding hygiene practices.
COST CONTROL & SAFETY
Adhere to safety rules and report any unsafe conditions.
Assist in maintaining cleanliness and safe working conditions in all areas.
Follow proper usage guidelines for cleaning chemicals and equipment.
MEETINGS
Attend daily briefings and assigned training sessions.
Participate in departmental meetings as required.
OTHERS
Support the hotel’s service culture by maintaining hygiene standards.
Comply with all Workplace Health & Safety and hygiene regulations.
Perform other duties as assigned to support operations.
Follow company values and maintain professional conduct at all times.

Profile of Competency:
Basic understanding of food safety or HACCP is a plus (training will be provided)
Friendly and approachable personality
Able to work in a fast- paced environment while following safety guidelines
Responsible and reliable
Willing to learn and able to follow instructions
Basic computer skills (Microsoft Office: Word, Excel)
Basic communication skills
Education:
Currently pursuing or recently graduated with a College/University degree in a related field (Hospitality, Food & Beverage, Food Safety, etc.)
